Instructions
Step 1
Heat olive oil on medium heat for about 5 minutes.
Step 2
Rinse mushrooms and rinse and scrub potatoes. Cut potatoes into bite size cubes, and mushrooms in a similar, slightly smaller fashion.
Step 3
Add potatoes. Cook, stirring occasionally, for 15 minutes or until potatoes have softened.
Step 4
Add mushrooms and continue cooking and stirring for another 5 minutes.
Step 5
Add spinach, and allow spinach to fully shrink for about 3 minutes, still stirring occasionally.
Step 6
Season with salt, pepper, and crushed red pepper to taste.
