Instructions
Step 1
Preheat oven to 450. Line 9x5x3 loaf pan with foil leaving 1" overhang on sides of pan and 5" overhang on each end. Spray with nonstick spray.
Step 2
Combine turkey, onion, breadcrumbs, bell pepper, eggs, bacon bits, thyme, salt, & pepper in medium bowl, reserving pinch of bacon bits for later. Mix well.
Step 3
Combine spinach, Greek yogurt, & Swiss med bowl, reserving 2-3 Tbs cheese.
Step 4
Place about 2/3 turkey mixture into prepared pan, packing down lightly and making an indentation, end to end, with back of large spoon. Fill indentation with spinach mix, cover with remaining 1/3 turkey mixture.
Step 5
Top with reserved cheese & bacon bits.
Step 6
Bake about 50 min or until cooked through. Let stand, covered, 10 min. Uncover, slice, & serve.
