Microwave Red Lentil Dhal

Instructions

Step 1
Rinse lentils in a colander until water runs clear. Transfer to a microwave safe bowl and add the rest of the ingredients with 200 ml of water and stir.
Step 2
Place in a microwave with a plate on the top.
Step 3
Cook on high (800W) for 9 minutes then stir, recover and microwave for another 5 minutes. Stir and spoon into a bowl.
Step 4
Add sprigs of coriander and a quarter of a French stick for a quick healthy lunch.
