Instructions
Step 1
Add the turmeric, cumin and coriander with the salt and pepper to a mortar with the garlic and ginger. Make in to a paste using a pestle.
Step 2
Coarsely chop the onion, tomatoes. Fine chop the chilli.
Step 3
Heat the ghee in a large pan and add the chopped onion, cook on a medium heat for 5 minutes until soft. Add the cumin seeds and cook for 1 minute. Add the paste from the mortar and cook for a further 2 minutes.
Step 4
Add the lentils and stir into the mixture. Cover the contents of the saucepan with water until about 2.5 cm above the ingredients, bring to boil.
Step 5
Add all the remaining ingredients apart from the fresh coriander
Step 6
Stir well and reduce the heat to low, put lid on pan and gently simmer for 30 minutes stirring occasionally.
Step 7
When the lentils are cooked through and have lost their shape take off the heat and add the fresh coriander coarsely chopped. Stir in and leave for 2 minutes.
Step 8
Stir in a couple of teaspoons of mango chutney.
Step 9
Serve with rice, naan or as a side dish.
