Step 1
Slice and add peppers and onion to bottom. Add chicken (I use whole chicken breasts) on top with can of tomatoes and chiles. Sprinkle top of chicken with seasoning. Cover and cook for 4 hours on high. Take out the chicken and shred with forks. Add back to crockpot and let cook for 20-30 more minutes.
