Step 1
Preheat your oven to 400F. Line a medium sized baking sheet with parchment paper or a silicone baking mat.

Step 2
Mix the cheeses together, then evenly spread them over the parchment paper in a circle shape. Bake the cheese shell for 5 minutes. Tap any extra oil off with a paper towel as soon as it comes out of the oven.
Step 3
Mix together the chicken breasts and Buffalo sauce in a small mixing bowl. Place the chicken over half of the cheese shell.

Fold the Cheese shell in half over the chicken. Press it firmly, then return it to the oven for another 5-8 minutes, or until the edges are crisped up.
Step 5
Allow to cool on the baking sheet for 5 minutes to finish up. Slice into three pieces with a pizza cutter.
Step 6
Serve on its own or with light sour cream and enjoy!
