Instructions

Step 1
pre heat the oven to 180 degrees / gas mark 4
Step 2
to cook the rice add to a pan with 200ml water, bring to the boil and reduce to a simmer on a low heat with the lid on for 15 minutes. No need to stir until finished
Step 3
rinse the salmon in cold water and pat dry with kitchen roll
Step 4
add to an ovenproof dish skin down
Step 5
mix the coconut milk, ginger, garlic and lime together and baste the salmon in the mix
Step 6
bake for 15 minutes
Step 7
serve with rice, steamed broccoli and coriander
