3corn tortillas

2 cupskale
chopped
2 ozred cabbage
chopped
1carrot
julienned
4 ozsalsa verde
1avocado
sliced
Cauliflower & Chickpea Filling
2 tspchili powder
1 tspground cumin
¼ teaspoongarlic powder
¼ tsponion powder
1 tspsea salt
1 Tbslime juice
1 Tbsolive oil
1 Tbswater
15 ozchickpeas
rinsed
16 ozcauliflower florets
sliced
Lime Crema Sauce
Instructions
Cauliflower & Chickpea Filling
Step 1
Preheat oven to 400 degrees.
Step 2
In a medium bowl, combine chili powder, garlic powder, onion powder, cumin, salt, lime juice, olive oil, and water. Stir in chickpeas and cauliflower.
Step 3
Place seasoned chickpeas and cauliflower on a greased baking sheet. Roast for 30-35 minutes, until chickpeas are slightly crispy and cauliflower is tender. Remove from oven and set aside.
Kale & Cabbage Slaw
Step 4
In a large bowl, mix together the kale, cabbage, and carrot. Set aside.
Lime Crema Sauce
Step 5
In a small bowl, combine all sauce ingredients and mix thoroughly.
Assemble Tacos!
Step 6
After removing the cauliflower and chickpea filling from the oven, reduce heat to 350 degrees. Place corn tortillas on a baking sheet and place in oven for 10 minutes.
Step 7
Meanwhile, combine cauliflower & chickpea filling with the kale & cabbage slaw and salsa verde.
Step 8
Place tortillas in holders and add filling. Top with sliced avocado and Lime Crema Sauce
