Smashed potatoes with avocado aioli and sausage

Instructions

Step 1
1. Preheat oven to 450 degrees F.

2. Place yellow potato in a large pot and cover with water. Place over high heat and bring to a boil. Reduce heat to medium-high and simmer uncovered 20 minutes.

3. Meanwhile, peel and pit avocado; place in a medium bowl and mash well with a fork. Whisk in garlic, mayonnaise and 2 tsp lemon juice, until mixture reaches a sauce-like consistency. Season with salt and pepper to taste.

4. Line a baking sheet with foil and grease the foil lightly. When yellow potato are tender, drain and place on the baking sheet. Using a large mug or cup, press down on each potato until flattened to 1/2-inch thickness. Drizzle with olive oil and season generously with salt and pepper. Roast 25 minutes, until crispy and golden brown.

5. Meanwhile, heat a skillet over medium-high heat. Remove turkey sausage from casing and add to pan. Cook, breaking up with a wooden spoon, until cooked through, about 10 minutes.
Step 6
6. Top smashed potatoes with turkey sausage, avocado aioli and fresh parsley.
