Kadi pakora is a dish of onion fritters from gram flour dunked in gram flour and yoghurt batter. It is typically eaten with rice but can also be served with roti or chapati.

Instructions

Step 1
Add 200g of gram flour, low-fat yoghurt, and 150ml of water in a large bowl. Mix well.
Step 2
On a medium heat, add three tablespoons of oil, three curry leaves, 1/2 teaspoon of cumin seeds, one teaspoon of garlic and the ginger paste, red chilli powder, turmeric and salt. Add 50 ml water and cook for 2 minutes.
Step 3
Add the gram flour and yoghurt mix to it. Mix well and add 700 ml of water.
Step 4
Bring it to a boil. Cover with the lid and cook for 30 minutes on low heat.
Step 5
Simultaneously in a bowl, add the remaining gram flour, baking soda and 100 ml water. Mix well to make a smooth batter.
Step 6
Add the coriander seeds, paprika, green chillies, coriander and half of the onion.
Step 7
Heat two tablespoons of oil in a frying pan. When the oil becomes hot, drop spoonfuls of the batter in the oil.
Step 8
Cook for three minutes on each side on low heat until golden.
Step 9
Once ready, add the fritters to the batter.
Step 10
Add two tablespoons of oil, half the onion, one teaspoon of garlic paste, two curry leaves, and half a teaspoon of cumin seeds in a separate pan and fry for 2 minutes on medium heat.
Step 11
Pour the mixture on top of the batter and garnish with coriander.
