Instructions

Step 1
1. Preheat oven to 150 degrees Celsius 2. Whip up the eggs with an electric mixer on a high speed until you see bubbles. 3. Add the sugar gradually (but keep mixing) until ribbon stage 4. Gently fold in the flour, baking powder, oil, lemon juice and lemon zest. 5. Oil your cake tin (if not making cupcakes) and pour the batter in. 6. Get another deeper tray and fill 3/4 with boiled water. 7. Place the tin with the batter in (make sure the tin is completely closed at the bottom so no water gets in) 8. For cupcakes, bake for 25-28 minutes. For a large cake, bake for 60 mins.
