Instructions
Step 1
Set oven to 400 degrees.

Step 2
Fill a small deep roasting pan with hot water until 1/2 filled. Place in oven while preheating.
Step 3
Bake prosciutto for 8-12 minutes until crisp. Cool and break into small pieces. Once prosciutto is out of the over, preheat to 350 degrees.

Blend eggs, cottage cheese, gruyere cheese, and black pepper in a food processor until smooth.
Step 5
Add prosciutto and mix thoroughly.
Step 6
Using nonstick spray or avocado oil, grease 18 cupcake liners.
Step 7
Divide the mixture equally between the cupcake trays and bake in oven for 25 minutes until puffed up and just cooked through.
Step 8
Gently lift the egg souffles out of the cupcake trays and cool on a wire rack.
Step 9
Wrap each one in some parchment paper and freeze in a ziplock freezer bag. Reheat in the microwave for 45-50 seconds.
