Shrimp and Bacon Salad with Lemon Dijon Dressing

Instructions

Dressing

Step 1
Whisk dressing ingredients, cover and place in refrigerator.

Salad

Step 2
Combine shrimp, paprika, 1/4 tsp salt and pepper in a medium bowl. Toss to coat shrimp, set aside.
Step 3
Select saute (normal). Once the pot is hot, add teh baco nslices and cook for 5 min per side or until crisp. Transfer bacon to a plate, blot with paper towels, and roughly chop up. Set aside.
Step 4
Add the shrimp to the bacon grease in the pot and cook for 2 minutes per side or until the shrimp are opaque. Transfer the shrip to a large bowl and season with the remaining salt.
Step 5
Add equeal amounts of the romaine and lettuce mix to 2 serving plates. Top each with tomatoes, avocado slices, bacon and shrimp.
Step 6
Whisk to combine dressing and pour over salads. Serve.
