Instructions
Step 1
Chop up the peppers, carrot, onion and courgette into roughly 2cm sized pieces.
Step 2
Half the mushrooms and put all the vegetables into a mixing bowl.
Step 3
Season with salt and pepper. Add in the oregano.
Step 4
Drizzle over the olive oil and mix until all the pieces are coated.
Step 5
Place the veg into the airfryer and fry for 10 minutes at 180. Stopping to shake had way through.
Step 6
Add in the cherry tomatoes and fry for a further 10 minutes. Again shaking half way through.
Step 7
Serve and enjoy. For a more substantial dish add cubed halloumi after the first 10 minutes.
