Instructions
Step 1
Heat olive oil in a large pot over medium heat. Add carrots and celery and sauté vegetables for 5-7 minutes, until very tender, stirring occasionally. Add garlic, onion powder and thyme and sauté for 30 seconds until fragrant.
Step 2
Add broth, salt and pepper, and bring to a boil over medium high heat. Add chicken and rice and stir to combine. Turn heat down to medium and simmer uncovered for 15 to 20 minutes, until rice is tender. Remove from the heat and cover, and let sit for five minutes. Serve warm.
