Instructions

Step 1
Take a large saucepan and sweat the onion down in the butter and olive oil. At this point, season with salt and pepper but don't allow to colour.
Step 2
Add the sliced apples and rosemary, stir around to break the apples down. Now add the sliced red cabbage.
Step 3
After a few minutes of vigorously stirring, the quantity will start to reduce.
Step 4
Cover the pan with a heavy lid to stop the steam from escaping and turn the heat down low. The cabbage will take between 45 minutes to 1 hour to cook. Check every now and then to give it a stir.
Step 5
Add the brown sugar, balsamic vinegar and cranberries for the last 5 - 10 minutes and cover again. Don't let the cabbage stick and burn; if it starts to then add a splash of water.
