Step 1
Cook your pasta al dente and keep one cup of pasta water.
Step 2
Toast your walnuts in a pan until fragrant. Set aside.
Step 3
Cut your zucchini and fennel in small cubes in the meantime. In the same skillet, pour in some olive oil and bake the zucchini and fennel. Add the peas in the last 4 minutes.
Step 4
Take half of the veggie mix out of the pan and into your blender. Add the leftover pasta water and hemp seeds and blend until a silky smooth consistency is created.
Step 5
Now mix everything together, generously sprinkle with pecorino and top off with your toasted walnuts.
