Grilled plantains(Boli/Bole) are a nice way to enjoy your plantains and I love to pair mine with some fish and pepper sauce.

Ingredients

For the Fish
2Tilapia
whole
2red habanero peppers
1yellow habanero pepper
6cloves garlic
1 thumbginger
1red onion
small
½ cupplain greek yogurt
¼ cupapple cider vinegar
¼ cupvegetable oil
curry powder
dried thyme leaves
chicken bouillon
salt
For the sauce

Instructions
Step 1
Gut and clean your Tilapia fish. You can cut them into 3 like I did or leave them whole if you prefer.
Step 2
Blend 2 red habaneros, 1 yellow habanero, 1 onion, garlic, ginger, vinegar and oil till it forms a smooth paste. Add seasoning of choice and mix till smooth and combined.
Step 3
Add the marinade to the fish and mix well, making sure it gets to every crevice. Cover and refrigerate for atleast 2 hours (preferably overnight).
Step 4
Peel the plantains and place them at the top rack of the airfryer/oven.
Step 5
Take out the marinated fish and place them on the bottom rack, then bake at 400F for 30 minutes.
Step 6
After 15 minutes, take out the plantains, flip to the other side and let them bake till the 30 minute timer is up.
Step 7
Take out the plantains then transfer the fish to the top rack and bake for an additional 15 minutes for a total cook time of 45 minutes.
Step 8
Blend the pepper mix for the sauce and set aside.
Step 9
In a warm pan add the palm oil, then add the pepper mix and let it cook on medium heat till most of the liquid has evaporated.
Step 10
Add the left over fish marinade to the sauce, cook for about 5 minutes on low heat and adjust the seasoning if necessary.
Step 11
Turn off the heat, serve and enjoy 😊
