Quinoa Slaw

Instructions
Step 1
Before you start
Bring a small pot of salted water to the boil.
Step 2
Cook quinoa
Cook quinoa in pot of boiling water for about 15 minutes, until tender with a slight bite. Drain, rinse under cold water, then drain well. Set aside.
Step 3
Prep chicken
Pat chicken dry, season with salt and toss in a medium bowl with cornflour and Indian blend *. Add egg to same bowl and toss to coat chicken.
Step 4
Crumb chicken
Place breadcrumbs in a medium bowl and add chicken, one piece at a time. Turn to coat each piece well and place on a plate.
Step 5
Cook chicken
Heat oil in a medium fry-pan on medium heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Rest, uncovered, before slicing thinly.
Step 6
Meanwhile, finish quinoa slaw
Prep bok Choy and toss in a medium bowl with slaw, Bombay aioli, vinegar and cooked quinoa. Season to taste with salt.
Step 7
Serve
Chicken with quinoa slaw.
