Step 1
1. Remove stalks from mushrooms. Reserve caps and chop stalks.

2. Melt 50 g (2oz) garlic butter in a non-stick saucepan and fry chopped mushrooms, onions and pepper until soft.
Step 3
To microwave: Melt 50g (202) garlic butter for 45 seconds and stir in mushrooms, onions and pepper. cover and cook for 3 minutes.

3. Remove from heat and stir in sweetcorn, breadcrumbs and half the cheese. Mix well.

4. Spread remaining butter over rounded sides of reserved mushroom caps.
Step 6
5. Put butter side down, in ovenproof dish.
Step 7
6. Spoon filling into mushrooms and sprinkle with remaining cheese.
Step 8
7. Bake at 180°C (350°F) Mark 4 for 20-25 minutes.
Step 9
To microwave: Cook uncovered for 5-6 minutes. If liked brown under a hot grill before serving.
Step 10
8. Serve hot, garnished with parsley.
