Smoky Taco Chex Mix con Queso
Based originally on the recipe at chex.com.
On my last try, I used 4 tablespoons margarine and 2 tablespoons of my chipotle taco seasoning mix. Subbed wheat chex in place of some rice chex. Added mini twist pretzels instead of cheese popcorn. Next time I might try microwave popcorn with cheese or hot sauce added. I finished this time with 45 minutes at 250F stirring after each 15 minutes instead of microwaving. Pretty spicy, so maybe compromise at 1 1/2 tablespoons of seasoning mix next time and/or omit the extra cayenne from the seasoning mix. Another idea is to add nacho cheddar popcorn seasoning (add to butter and seasonings or sprinkle over the mix before baking). More from other recipes: Some recipes use oil instead of butter. Try adding fritos, peanuts, taco doritos slightly crunched, Fritos Honey BBQ Twists, Bugles, pepitas, microwave popcorn.

4 cupscorn chex cereal
3 cupsrice chex cereal
1 cupwheat chex cereal
2 cupsbite-size cheese crackers
2 cupspretzel mini twists
4 tablespoonsbutter
1 ½ tablespoonsChipotle taco seasoning
Instructions
Step 1
Preheat oven to 250F.
Step 2
In large bowl, mix cereals, crackers and pretzels.
Step 3
In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in taco seasoning mix until blended. Pour over cereal mixture; stirring until evenly coated.
Step 4
Spread mix on baking sheet and bake at 250F for 45 minutes, stirring after each 15 minutes. Remove from oven and allow to cool.
Step 5
Store cooled mix in a gallon ziplock bag.
