Ingredients
4 servings
1 bagyellow baby potatoes
halved
1 ½ cupsplain greek yogurt
0.5lime
squeezed
1 tablespoonolive oil
1 ½ tablespoonwhite wine vinegar
1 teaspooncayenne pepper
1 teaspoonkosher salt
1 teaspoonfresh ground black pepper
3 stalksgreen onion
thinly sliced, plus 1 extra for garnish
1red pepper
diced
3 leavespineapple sage
torn, plus 1 extra for garnish
Instructions
Step 1
In a medium pot, cover potatoes in water, bring to boil, then add a bit of kosher salt to water. Continue to boil for 10 min until potatoes are tender and can be easily pierced with a fork.
Step 2
Combine remainder of ingredients in a large bowl.
Step 3
Drain potatoes. Add them to the dressing and toss until potatoes are covered. Top with some fresh green onions and pineapple sage before serving.
