Gorgonzola Scalloped Potatoes

Cheesy potatoes are amazing as is- but adding Gorgonzola is a game-changer. This recipe is inspired by the Gorgonzola crackers that Trader Joe's stopped carrying. I miss them dearly. But until I am reunited with my favorite crackers, this recipe will satisfy my Gorgonzola cravings. Enjoy!

Step 1
Preheat oven to 375º
Step 2
Use a food processor to thinly slice, or scallop, your potatoes.
Step 3
Saute your diced white onion for 5 minutes in a large, oiled pan over medium-high heat. When translucent, add in minced garlic, milk, salt, pepper, gorgonzola, mozzarella, and pecorino. Stir over medium heat until uniform.
Step 4
Layer the potatoes inside an oiled 13 x 9 pan. Pour the cheesy mixture on top of the potatoes and use a spatula to mix it in. Grate some more pecorino on top to taste.
Step 5
Bake for 30-40 minutes, or until browned.
Step 6
Let it cool for 10 minutes before serving. Enjoy!
