Instructions

Step 1
Heat the oven to 180c/160c fan/gas 4. Butter a deep 20cm cake tin, then line with baking parchment.

Step 2
Mix the flour and cinnamon together in a large bowl. Add the butter and rub it in using your fingers until it resembles fine breadcrumbs. Stir in the brown sugar, then beat in the egg and gradually add the milk until you have a smooth, thick batter.

Stir in the apples and sultanas. S rape the batter into the tin and smooth the top. Sprinkle over the Demerara sugar, if using, and bake for 30-40 mins, or until golden and a skewer inserted into the middle comes out clean.

Leave to cool in the tin for 15 mins, then turn out onto a wire rack to cool completely. Serve warm with custard.
