Instructions

Step 1
Bring the water to a boil, turn down to simmer and add quinoa; stir and cover. Cook for 15 minutes on low heat, take off and leave covered for another 5 min. Combine parmesan, pesto, lime, and cooked quinoa in a bowl, stir. Add the spinach, artichokes, and cucumber. Garnish with sliced avocado and pumpkin seeds. Extra: Chicken!
