Step 1
Add the water to a small pot and bring to a boil. Add salt and whisk in the grits. Reduce heat to low and simmer, covered, for 15 - 20 minutes. Stir occasionally with a spatula to prevent sticking.
Step 2
Over medium heat, saute bacon until brown and crispy. Use a slotted spoon to remove bacon and place on paper towel to drain.
Step 3
Add the shallot to the bacon grease and sauté a couple of minutes. Add the garlic and cook another minute or two, until just beginning to brown.
Step 4
Add the shrimp in a single layer to the pan, pour over the wine, and leave to cook for 2 - 3 minutes.
Step 5
While the shrimp cooks, stir the grated cheese into the grits until melted. Turn off the heat.
Step 6
Turn the shrimp and let finish cooking - 1 to 2 minutes longer. Stir everything well to make sure the sauce is coating the shrimp.
Step 7
To serve, put the cheese grits into three bowls, then divide the shrimp into even servings. Spoon the sauce from the pan over the shrimp, then add the crumbled back.
