Instructions
Step 1
In a large skillet over medium heat, drizzle some olive oil in the pan and add the panko and a pinch of salt.
Step 2
Stir the panko every 30 seconds for 4-5 minutes, or until toasted and golden.
Step 3
While the panko is toasting, cut the chicken into 1" pieces (or smaller if you prefer). Season with salt and pepper to taste.
Step 4
Once the panko is toasted, remove it from the heat and add 2 tsp garlic powder, 2 tsp onion powder, 1 tsp smoked paprika, and 1/8 tsp cayenne pepper. Mix to combine.
Step 5
Add flour, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp smoked paprika, and salt to a shallow bowl or plate.
Step 6
Add two eggs and 2 tsp water or milk to a bowl and whisk.
Step 7
Pour the panko breadcrumb mix into another shallow bowl or plate.
Step 8
Place 10-12 pieces of chicken into the flour, then the egg, then the panko breadcrumb mixture. Press the breadcrumbs into the chicken to ensure the breading sticks to the chicken.
Step 9
Preheat your air fryer to 375F for 2-3 minutes and add chicken to the air fryer (will need to cook in batches). Cook for 5-6 minutes, shaking halfway through, until golden and the internal temperature reaches 165F.
Step 10
Serve alongside your favorite dipping sauce or enjoy as is!
