Ingredients

2 poundspotatoes
peeled and diced
1garlic clove
minced
¼ cupfresh parsley
roughly chopped
2 tablespoonsgreen onion
finely chopped
½ teaspoonmustard powder
2 teaspoonsfresh lemon juice

Instructions
Step 1
Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes in the basket, cover, and steam for 5 to 10 minutes, until tender. Remove and place in a bowl.
Step 2
Add the garlic, parsley, green onion, mustard powder, and lemon juice. Mix well. Add any additions you would like.
Step 3
Divide between bowls and serve.

If you don’t like parsley, you can replace it with another herb you do like, such as basil, dill, or cilantro.
