This is one of favorite soups of all time! It’s packed with flavor and cooks in less than 20 minutes, making it the perfect weeknight dinner. Top with croutons, crispy prosciutto, truffle oil or fresh herbs.

Instructions
Step 1
* Melt butter and oil in a large pot over medium heat. Add shallots and cook until softened, about 3-4 minutes.
Step 2
* Stir in mushrooms and cook until all moisture has evaporated, about 5-6 minutes.
Step 3
* Add porcini powder, if using, thyme, flour and a pinch of salt and pepper. Let the flour cook out for a minute or two, stirring constantly.
Step 4
* Pour in the stock and bring to a boil. Add Brie cubes, reduce heat to low, and simmer until cheese has melted.
Step 5
* Remove from heat and blend with an immersion blender until you reach your desired consistency.
Step 6
* Place back over medium-low heat and add the half and half and salt and pepper to taste.
Step 7
* Serve immediately with toppings of choice.
