Oma-Style Roasted Chicken 🍗

Juicy, flavorful chicken with lots of sauce just like Oma.

Instructions
Step 1
Get a 4 lb chicken (ideally with innards) Ideally put the chicken in a roasting pan not much bigger than the bird. This means less juice evaporates from the pan.
Step 2
Season the chicken and innards with ~ 1 to 1.5 tablespoons of coarse kosher salt. Toss any remaining salt inside the cavity.
Step 3
Cover the bird and innards evenly in peanut oil (this will make it taste more like Oma's!). About two tablespoons should do. Place innards around the chicken (more juice and flavor!)
Step 4
Preheat oven to 450° and put the chicken in immediately. You want the chicken warming up with the oven. This makes for more fat rendering out.
Step 5
Chop onions.
Step 6
After 40 mins, lift bird up with tongs and let juices leave cavity. Add onions to pan. Continue to cook and after 20 minutes check for doneness. Cavity juices should run brown and thighs will jiggle loosely in sockets. When pricked, meat juice should run yellow or clear.
Step 7
Put chicken on a cutting board and let rest for 5 mins uncovered before cutting.
Step 8
Remove innards from sauce and serve!
