Ingredients
4 servings
500gpork sausage meat
1onion
medium, grated
1carrot
large, grated
50gwhite breadcrumbs
fresh
4 tbspstomato ketchup
1 Tbspchilli seasoning
mixture of garlic, dried powdered chili pepper and herbs and spices such as oregano and cumin
¼ teaspoonground mixed spice
salt
freshly ground black pepper
vegetable oil for frying
Instructions
Step 1
Combien all the ingredients (except the oil) in a large bowl, using floured fingertips to mix well. Season with salt and pepper.
Step 2
With floured hands (The sausagemeat mixture is very sticky, so flour your hands well before shaping the burgers), dived the mixture into 4-6 portions and roll them into bowls. Flatten each slightly. Chill the burgers in the refrigerator for 30 minutes, then leave them at room temperature for a few minutes before cooking (Chilling the burgers before cooking improves both their flavour and texture).

Step 3
Heat a little oil in a large frying-pan. Fry the burgers for 3-4 minutes on each side or until they are browned and cooked through.
Step 4
Drain the cooked burgers thoroughly on absorbent paper, then serve at once while very hot.
Step 5
Serve the burgers with French fries and a salad, or in soft baps like hamburgers.
