Instructions

Preheat oven to 500°F

Step 1
Position rack in middle.
Step 2
Add flour, salt and olive oil in bowl of food processor fitted with the steel blade; turn on & add the water.
Step 3
Continue to run food processor until dough forms a ball, rides around on blade & is not sticky (90 sec.)
Step 4
Place dough on a clean counter. Cut dough into 12 sm. balls (This is easiest if you cut the ball in half, in half again, then into thirds.)
Step 5
On lightly-floured surface, use your hand to flatten each ball into a 3-inch patty. Use a rolling pin to roll each patty into a 6- to 8-inch circle. The shapes can be irregular, but the dough should be so thin you can almost see through it. (It's good to turn the dough a few times as you roll to prevent sticking, but you don't need to worry about it too much as the dough is easy to peel of the counter.)
Step 6
Put a few pieces of the rolled out dough on a 13”x18” baking sheet; prick dough all over with a fork (to keeps from puffing up too much).
Step 7
Bake (2-4 min.), keeping a very close eye on them, until they are golden & puffed in spots; flip over & cook (1-2 min. longer, until golden. Repeat in batches, cooling completely. (Store in air-tight container up to 2 days.)
