Classic Sweet Apple Kugel
This is the only sweet dish in this book, and you can serve it for lunch, dinner, or dessert. Heck, you could even have it for breakfast. Kugels are traditional Jewish dishes, but you don’t have to be Jewish to love them. This sweet kugel is a creamy pudding, laced with tender noodles and studded with apples and raisins—what’s not to love?

Step 1
Preheat the oven to 375°F. Bring a large pot of water to a boil for the pasta (do not salt the water). Lightly oil a 2-quart baking dish.
Step 2
In a food processor, combine the cottage cheese and sour cream and process until smooth. Add the sugar, eggs, and cinnamon and process to mix.
Step 3
Cook the dried noodles 3 minutes less than the package directs; they will be flexible but still crunchy. If you are using fresh pasta, cook it for 1 minute. Drain, rinse with cold water, and drain again. In a large bowl, combine the noodles, ap-ples, and raisins and pour the cottage cheese mixture over the top. Fold it all together, then transfer to the baking dish.
Step 4
Bake uncovered for 45 minutes, or until the edges are puffed and the center is set. Serve warm.
