Instructions

Step 1
Cover in olive oil. Let rest at room temperature for 30min.
Step 2
Sprinkle with rosemary salt and finely ground pepper. Make sure to roll the edges as well.
Step 3
Bring pan and 1-2Tbsp of avocado oil to medium high heat. Put the steaks in and sear on each side for 1min. Remove from heat and let rest for 2min.
Step 4
Drop the heat to low. Cut up butter and drop in pan. When the butter starts to foam, put the steak back. Constantly baste. Turn the meat every 30 seconds.
Step 5
When the steak reaches 90deg internally, remove from heat and let rest for 5min.
Step 6
Put crushed garlic, rosemary and sage in the butter, put the low heat back on, and put the steak back in. Continue to baste constantly.
Step 7
When the steak reaches 125deg internally, turn up the heat for 1min, basting constantly and turning at 30sec.
Step 8
Take the steaks off the heat and cover with the remaining butter. Let rest for 6min.
