Instructions

Step 1
Make a crack in the eggplant. Place it on an oven tray and roast them for an hour in the oven over medium heat.
Step 2
Take the eggplant out of the oven. Leave it to cool down at room temperature.
Step 3
Peel the eggplant when it cools and chop it into medium-sized pieces.
Step 4
Mix the eggplant pieces by fork, add the lemon juice, tahini, garlic and salt and mix the ingredients well until you get the consistency you want.
Step 5
Place the eggplant moutabal in a serving dish. Pour olive oil on top, garnish with chopped parsley and sprinkle cayenne pepper and serve it in single or multiple sharing plates.
