low carb breakfast for my carb cycling diet. the health message is because of high cholesterol because of the eggs. that is only 2 per serving. and the yokes hold many healthy vitamins so I did not change it. if you want to use egg whites by all means you do you and God Bless.

Step 1
cook sausage fully drain grease
Step 2
beat eggs in bowl with water, salt and pepper. (the water will steam and add extra fluffiness/volume to the eggs.
Step 3
melt butter in a pan
Step 4
sauté onions until translucent then add spinach and sauté until it begins to wilt
Step 5
Scramble eggs moving slowly to allow for large curds. about halfway through cooking. Add the sausage begin folding the eggs and sausage together.
Step 6
Fold in cooked veggies to scrambled eggs
Step 7
serve hot
