Garlicky Chili con Carne

Best slow cooker chili ever. This can easily be made vegetarian by not using beef and using vegetable broth instead of chicken or beef.

Ingredients
8 servings
3 headsroasted garlic
2sweet onions
caramelized
olive oil
1 poundground beef
15 ouncecan chili beans
drained and rinsed
15 ouncecan black beans
drained and rinsed
15 ouncecan northern beans
drained and rinsed
15 ouncecan kidney beans
drained and rinsed
28 ouncecrushed tomatoes
2 ½ cupsbroth
chili powder
to taste
salt
to taste
freshly ground black pepper
to taste
cumin
to taste
onion powder
to taste
3 cupsshredded cheddar cheese
2green onions
chopped, for serving
1 cupcilantro
chopped
Instructions
Step 1
Preheat (toaster) oven to 450°. Cut 1/4" off of garlic heads and remove papery skin. Wrap loosely in tin foil, drizzled with olive oil. Roast for 50 minutes to 1 hour and 15 minutes. Check often after 50 minutes.

Chop and caramelize onions.

Season ground beef with salt, pepper, cumin and chili powder. Brown beef and add garlic and onions just before beef is fully browned.
Step 4
Add everything to slow cooker and cook 4-4 1/2 hours on high, or 8 hours on low.
Step 5
Top with cheese and green onions and/or cilantro.
