Instructions
Step 1
Rinse the scallops and pat dry. Using a sharp knife make a cross hatch pattern on each side of the scallops being careful to keep each cut very shallow. 1/8 of an inch maximum.
Step 2
Par cook the bacon, drain off all the grease. wrap each scallop with a piece of bacon around the sides and secure with a toothpick.
Step 3
In a large skillet over medium high heat melt butter, add 2 ounces of the bourbon. Cook 2-3 minutes on each side. Transfer the scallops to a plate and discard the excess liquid. Return the skillet to the heat and add the butter, bourbon, brown sugar, peppers and salt and pepper. Whisk over medium high heat for 1-3 minutes or until the alcohol evaporates. Drizzle over scallops. Garnish with micro radish.
