Instructions
Step 1
Get the meat out of the fridge 1 hour before you want to cook it.
Step 2
In a pestle and mortar bash up the rosemary and garlic adding the olive oil, salt, pepper and mustard. Rub all over the beef.
Step 3
Get a roasting tin nice and hot and sear the joint all over.
Step 4
Slice the onion into three disks and sit the beef on top.
Step 5
Put in an oven at 200 degrees, 180 fan for 22 minutes per 500g plus 20 minutes for medium rare meat. So for a 1.5kg joint, total cooking time about 1 1/2 hours.
Step 6
Rest the meat on a warmed plate.
Step 7
Put the roasting tray, complete with onions on the hob and stir in the flour so you have a paste. Add the wine whisking all the time then the beef stock. Simmer for 15 minutes. Add any juices from the rested joint.
