Warm peach & basil salad

Sweet roasted peaches, zesty basil, peppery rocket, crisp celery and toasted walnuts come together in this sweet and tangy salad. Especially good to revive those peaches left neglected in the fruit bowl.

Instructions

Step 1
Preheat the oven to 180°C/350°F/gas mark 4.
Step 2
Lay the peach slices in a roasting pan and brush with a little sunflower oil. Roast in the oven for 10 minutes, then carefully scatter in the walnuts and cook for a further 5 minutes.
Step 3
Meanwhile, combine the rocket, celery and balsamic vinegar in a bowl, then transfer to plates or a serving bowl.
Step 4
Remove the roasted peaches and walnuts from the oven and lay over the dressed rocket. Scatter with basil leaves and serve warm.
