Crockpot Pork Loin with Sweet Potatoes, Apples, and Sauerkraut (AIP Compliant)

Slow cooker pork loin, falls apart when done! 10 minute preparation time, cook 6 hours on low in 6-qt crockpot. Remove black pepper for it to be Autoimmune Protocol (AIP) compliant. Recipe is low-spice to be IBD friendly, pump up the spices as you like!

Instructions

Step 1
Coarsely cut sweet potatoes and apples into 1.5 inch chunks
Step 2
Separate sauerkraut from its liquid, reserve both
Step 3
Combine spices [if you use salt, pepper, etc.] and minced garlic
Step 4
Rub pork loin with garlic and spice mixture, and place loin fat side up at bottom of crockpot
Step 5
Place drained sauerkraut along top of loin
Step 6
Place chopped potato and apples around and over loin [NOTE: if you prefer your potatoes more firm, reserve them and add them after the first hour of cooking is complete]
Step 7
Carefully pour apple cider vinegar, apple juice, and sauerkraut juice into the pot at the side (so you don't wash off the spice on the loin!)
Step 8
Plug in the slow cooker, cook on low for 6 hours.
