Instructions
Step 1
1️⃣Firstly, place the pasta onto boil for 10-12 minutes
Step 2
2️⃣Roughly dice the onion, garlic and halve the tomatoes
Step 3
3️⃣Heat a non stick pan with the olive oil, adding in the onion + garlic + tomatoes + pinch salt and fry for 2-3 minutes until they soften
Step 4
4️⃣Now add in the chopped olives + capers + can of tomatoes, stir and simmer for 5-6 minutes
Step 5
5️⃣Finally, add the pasta directly into the sauce along with handful freshly chopped parsley and stir until well combined

This was really excellent. I made a few modifications - substituted zucchini noodles for the pasta, basil for the parsley, and added grated parmesan. Quick and easy (that's what makes it "puttanesca," right?) and very affordable during the summer. I'd recommend pairing it with garlic shrimp for those that eat it (I don't) and spiced chickpeas for vegetarians/vegans.
