Instructions

Step 1
Heat butter over medium/low heat (careful not to burn the butter). Once heated thoroughly, add d chicken to the pan and cook for 4-5 minutes or until white in the center.
Step 2
Add the diced celery, onion, and bell pepper and saute till tender, but not brown.
Step 3
Stir in undrained diced tomatoes, chicken broth, uncooked rice, basil, garlic powder, black pepper, hot sauce, and bay leaf.
Step 4
Bring mixture to a bowl, and then reduce heat to a simmer.
Step 5
Discard and throw away the bay leaf into the trash.
Step 6
Cover the pan and simmer for about 20 minutes or until rice is tender and cooked.
Step 7
Serve on a plate or bowl and Enjoy!
