Fudgy Chocolate Truffle Mochi

Make this at home! Fudgy & chewy chocolate mochis!
If you have time, I recommend making the chocolate filling a day before so you can use it right away the next day when you are making the mochi dough.

Step 1
Chop up your chocolate bar and melt by double boiling. (Boil water and add a bowl on top with chocolate to let it melt.)

Once the chocolate bar has melted, add in heavy cream and gently stir.

Pour the mixture into a container and let it sit in the freezer for 2 hours (Put wrap underneath so it's easier to take it out later!)
Step 4
For the mochi dough, mix glutinous rice flour, sugar, a pinch of salt and hot water together in a bowl.

Step 5
Cover with wrap, poke holes and microwave for 1.30- 2 minutes.
Step 6
Let it cool for a few minutes before taking the dough out.
Step 7
Spread cornstarch powder on a board and flatten out the mochi dough with your hands.

Slice into squares (should come out to about 8 slices).
Step 9
Take out the chocolate filling from the freezer and slice evenly into 8 pieces. (I left it in the fridge overnight)
Step 10
Place chocolate in the middle of the mochi dough slice, wrap it up and take off any excess on top.

Dip the mochis in unsweetened cocoa powder and enjoy!
