Teff, fava beans and chard flatbread

Original inspiration for this recipe came from teff idli found here: https://teffco.com/recipe/34286-2/ This lead to bring together ideas of traditional Ethiopian flatbread injera and Indian adai dosa.

Instructions

Step 1
Mix teff with water to achieve consistency of thick yogurt
Step 2
Mix separately beans flour into thick batter
Step 3
Leave both containers in the warm place to ferment for 8-12 hours
Step 4
Cook chard for a few minin salty water. Squeeze lime juice on it.
Step 5
Let it cool a little and blitz in a food processor
Step 6
Remove dark water from teff. Mix teff batter with bean batter with blitzed chard
Step 7
Add baking powder, more lime juice, salt to taste and enough water to mix into thick, but spoonable batter
Step 8
Heat a little oil in a big heavy pan. Spoon some batter into it and spread with the back of a spoon.
Step 9
Cover and cook until flatbread changes colour and becomes dark. Remove from pan. Cook in this way all the batter.
Step 10
Serve with hot curry or chutney
