Instructions
Step 1
Place chicken breasts on a plate and season with salt and pepper. Sprinkle with chopped garlic and rosemary, turning once or twice to coat evenly.
Step 2
In a bowl, whisk together 2 tbsp oil and 1 tbsp vinegar. Pour over chicken and set aside to marinate for 20 to 30 minutes. Meanwhile, steam spinach until barely wilted.
Step 3
In a heavy skillet over medium high heat, place chicken breasts, skin side down. Reduce heat to medium and cook for 8 minutes, or until browned. Turn chicken over, cover pan, and cook for 5 minutes. Remove cover and continue cooking for 3 minutes or until chicken is cooked through (165*F).
Step 4
Place a separate skillet over medium heat. Combine remaining 1 tbsp oil and sliced garlic and heat just until garlic sizzles. Remove skillet from heat, add spinach, and toss to coat.
Step 5
Remove chicken from skillet. Add sugar and remaining 2 tbsp vinegar to skillet and oil, stirring, for about 1 minute, until mixture is blended and reduced by half. Drizzle a little of this glaze over each chicken breast. Serve on a bed of spinach.
