Instructions

Step 1
Remove the large outer leaves and set aside 6–8 of them to provide the cups.
Step 2
Slice the smaller leaves and place in a medium bowl.
Step 3
Add the rest of the ingredients to the bowl, season with sea salt and ground black pepper and mix well.
Step 4
Spoon the filling into the wraps and serve.
Step 5
NON-FAST DAYS: Add chopped avocado to the salad mix, or double the portion size.
