Instructions
Step 1
Wash cranberries; remove any stems. In food processor or with knife on board, chop cranberries very fine.
Step 2
In large bowl, combine cranberries and sugar, let stand 15 minutes, stirring occasionally.
Step 3
Measure orange juice into a small saucepan; sprinkle gelatin over top. Let stand briefly to soften gelatin. Set over low heat and heat, stirring, until gelatin is dissolved. Add to cranberries with celery, pecans and apple.
Step 4
Mix well and transfer to a rinsed 1-quart mold. Refrigerate until firm. Unmold on serving platter, garnish with small leaves of lettuce.
