Instructions

Step 1
1. Bloom the gelatin (Add the sheet of gelatin to a bowl of cold water and soak for 5 mins).
Step 2
2. In a pan, pour all the dairies (heavy cream, whole milk), the sugar and the salt. Whisk this and let simmer it (but not boil).
Step 3
3. Add the vanilla extract to the gelatin and microwave it for 10 secs to melt.
Step 4
4. Pour the gelatin into the dairy mixture and whisk this until completely dissolved (before boil).
Step 5
5. Cool to room temperature and chill until set for 4 hours.
Step 6
6. Put the strawberries, lime and sugar into another pan in high fire, then lower the fire. Smash the strawberries until dissolve it.
Step 7
7. Serve with a drizzle of the strawberry compote and sliced fresh strawberries (optional).
