Carrie's Garlic Pesto-Tuna Salad Sandwiches

An easy, no-cook recipe thats great for quick lunches and dinners. I love creating new tuna sandwich recipes and this particular one was a big hit. Substitute with any other type of whole-wheat or grain bread if you don't like rye.

Ingredients

2 x 5 ouncecans tuna packed in water
drained
2 tablespoonsmayonnaise
3 cbasil fresh
moderately packed
1 tablespoonmustard
2cloves garlic
minced
8 leaveslettuce
1tomato
large, sliced
8 slicesgluten free bread
1lemon
juice of, small-medium
⅓ cpine nuts
2garlic cloves

¼ cextra virgin olive oil

Instructions
Pesto
Step 1
In a food processor, combine all ingredients except the olive oil. Pulse until evenly chopped. Slowly add in the olive oil through the top of the processor. Pulse until evenly combined, but not completely smooth.
Tuna
Step 2
Mix together tuna, mayonnaise, pesto, mustard, and garlic in a bowl. Layer tuna mixture, lettuce, and tomato evenly over 4 bread slices. Top with remaining 4 bread slices.
